Blini’s Pie


6-7 blinis (or crepes, or very thin pan-size pancakes) ground meat
0.25 lb ground onions
0.5 tsp salt
Pinch of black pepper
3 eggs
3 tbsp sour cream
1-2 garlic cloves (optional)


Fry ground meat, stirring thoroughly to create small mild ground meat chunks, for about 5 minutes, until meat is ready.
Add the eggs to the meat chunks and continue to stir fry until eggs are ready and well mixed with the meat.
Divide ground meat mix into (number of crepes – 1) portions.

You can add ground garlic to the meat-egg mix.

Grease a baking pan with butter or margarine, put crepe on it, and then put a ground meat layer over it. Continue until you run out of ground meat.
Cover the meat layer with the last crepe, and cover the crepe with the sour cream.
Bake in a pre-heated oven for about 7-10 minutes, until sour cream turn a light golden color.
Cut into portions and serve.

Sour Cream Cake

This is very popular in Russia kind of cakes. You can change creams, and get different taste.


For the dough:

7 eggs
2 cups flour
1.5 cups sugar
1 tsp baking soda
1 tsp baking mix
Vanilla (a few drops)

For Sour-cream-based Cream:

1.2-1.8 lb sour cream (depends on thickness)
0.5 cups sugar

Chocolate cream:

1.5 cup whipping cream
1 lb grated chocolate
6 tbsp butter


To make dough, blend all the ingredients for dough together, and whip for 2 minutes.
Bake the dough portions (3-5) in shapes for about 5 minutes in an oven pre-heated to 400º F (200º C).
Let them cool, and cut away the edges.
To make sour cream-based cream, whip all its ingredients together.
To make chocolate cream, melt the chocolate. Add hot whipping cream and melted butter to it, and stir until the even consistency is reached. Let cool.
To assemble the cake, place 1 biscuit on a cake dish, and cover it with sour-cream-based cream. Continue until you run out of biscuit and cream.
You can add to sour-cream-based cream the grated walnuts or other grated nuts.

Cover the sides and top of the cake with the chocolate cream, decorate with grated coconuts, or with other decorations.
Let sit for 8-10 hours in the refrigerator, and serve.

Family Apple Pie


For dough:
1 cup milk
2 eggs
0.25 lb margarine
3 tbsp sugar
1 tsp salt
1 pack dry yeast
4 cups flour

For stuffing:
3-4 lb crispy apples
1.5 lb sugar


Remove apple seeds and around them, and cut apples into thin slices.
Put them in an enameled saucepan.
Bring 2/3 cup water to boil in another saucepan, add sugar, mix well, bring to boil, and remove heating. Pour the boiling syrup over the apples, and let to cool for 1 hour.
Then, bring to boil with high heating, let to cool, and drain the apples.
Make a dough:
Dissolve yeasts in warm milk.
Whip eggs with sugar. Add milk with yeasts, and mix well.
Add salt and 2 cups flour, and blend. The dough will be thin.
Melt margarine, add to dough, and mix well.
Then, add 2 cups flour by the tablespoon.

Roll the dough by baking sheet sizes, keeping the leftovers for decorations.
Grease the baking sheet with margarine, place the dough on the baking sheet.
Place the apples over the dough.
Roll the dough leftovers in thin tubes, and cover the apples with them as a crossover pattern.
Moisturize a pie with water, and let to sit for 1-1.5 hours until the dough increases twice.
Pre-heat an oven to 200-220 C, place the pie in oven, and bake for 20-25 minutes.
If top of the pie starts to burn, cover it with a foil.

When pie is ready, place it in a flat dish, grease the top with butter, or sprinkle with sweet water, cover with towel, and let to sit for 5-10 minutes, then serve.

0.5 lb vegetables (potato, eggplans, ...)
0.5 cup peeled walnuts
3 cloves garlic
4 – 5 tbsp pomegranate juice (or wine vinegar 1-2 tbsp)
2 tbsp coriander greens
2 tbsp parsley greens
2 tbsp dill
1/4 tsp grated red pepper
1/3 tsp kchmeli-suneli spice
Salt on taste


Boil vegetables until readiness, cool, and peel if necessary.
Cut the vegetables into small cubes.
Grate garlic and walnuts together, and then mix them with thinly cut greens, spices and vinegar.
Stir vegetables and this mix together very well.
